Ingredients:
1 1/2 lbs fingerling potatoes
1/4 cup cubed red onion
1/4 cup chopped scallion
1/4 cup cubed white onion
1 garlic clove chopped small
1/4 chopped cilantro
1/4 cup olive oil
3 tablespoons whole grain spicy mustard
1/4 teaspoon pink salt
1/4 teaspoon black pepper
2 tablespoons lemon juice
Preparation:
Wash potatoes thoroughly, place them in a pan covered with water, put them in high heat to boil for about 30 min or until soft but not to the point of dissolving. After the potatoes are done let them sit on the side until cool, slice them in half length wise. Place the halved potatoes in a bowl, add the rest of the ingredients, toss until all is mixed equally.
