I love cauliflower and this recipe just lets the cauliflower do all the work! The beauty of getting things fresh from the market is that to get bold flavors from the veggies you really don't need much!
Ingredients:
Large cauliflower
1 lb spinach
1/2 cup diced scallion
1/2 cup white onion
1 clove diced garlic
1/2 cup parsley
Preparation:
Cut 3 steaks from the cauliflower from the center of the head where the core is the thickest. Place cauliflower in a cast iron pan over medium heat with about 3 tablespoons of olive oil. Sprinkle some salt and pepper to your liking. Let it sear for about 5 minutes on each side then bring heat to high and give them a quick 2 minutes or cook until slightly browned.
Spinach:
In a medium cast iron pan over medium heat, add 3 tablespoons of olive oil, garlic , and scallion. Let it brown for two minutes then add parsley and spinach. Add some salt and pepper while tossing around until spinach is cooked.
Serve the spinach over the steaks and enjoy!
